What determines whether a big diamond is divided up or made into a big jewel? For example, why was the Cullinan cut up into nine big gems (and bipity-bip tiny ones) instead of one or two monsters?

To maximize the total weight of "clean" gemstones. Search on "Rough Diamond Planning" to understand why two or three gemstones are made from a single diamond.

I had always thought it was down to the crystal structure of the initial stone and how best to cleave it, getting the best 'light' from the stones cleaved from it, and in the end, maximizing the value of the resulting stones.

But I know nothing about the subject, so that is just my conjecture
